Olive Oil Terroirs
We approach extra virgin olive oil like fine wine — through its origins, its sensory journey, as well as the corresponding food pairing propositions.

That’s why we apply the French term "terroir" (proper to wine) — going far beyond the variety or the harvest year.
​
​The terroirs of olive oil refer to a space where collective knowledge develops — shaped by interactions between a distinct physical and biological environment (soil, climate, biodiversity, olive varieties) and specific olive-growing practices (including harvest methods, milling technology, and storage techniques!).

Just as a Pinot Noir from Burgundy, the Loire or Alsace will give us three very different wines, the same olive variety grown in different regions will give us two olive oils with very distinct sensory profiles.
The same as for two oils from the same variety from the same region but cultivated differently (irrigation, harvest time, etc.).
This is why we talk about the olive oil terroir, well beyond the olive variety or the harvest year.

One difference, however: olive oil doesn't age well. Consider choosing oils from the latest harvest.

About us:
A lawyer by training and a trader at heart, I launched Ad Olivetum in 2021 to represent some of the producers I was working with at the time on plant health in their farms in Greece, Spain and Italy.
Since then, the project has grown into a broader activity centered around Mediterranean olive groves: consulting from production to sales, creation of a range of products to be paired with wine, cheese, and cold cuts, as well as partnerships with leaders in high-end gastronomy and training sessions for producers. And lots, lots of extra virgin olive oil tastings!
