Pairings and presentation ideas
Nature: simply spread out on a marble base with a drizzle of early harvest extra virgin olive oil.
Also, fresh from the oven with a beautiful Saint-Pierre. We suggest not putting them in the oven, as the caper leaves are thin and delicate and risk drying out without providing the desired crispness.
In salads: on tomato slices or on fish carpaccio (salmon, tuna). Its size also allows you to spread the leaves on vitello tonnato, or enjoy them as a carpaccio on their own with a drizzle of extra virgin olive oil.
Gourmet aperitif
Wrap a cube of salmon and attach it to the leaf with a toothpick: a caper leaf candy!
Wine pairings:
WHITE WINE: a dry, lively wine, but also with white fruit, not too heavy, not too ponderous.
RED WINE: freshness, liveliness, not too many tannins, with delicate red fruit (no black fruit) like a St Joseph. With sliced tomatoes.

For their unique sensory experience : crunchy, slightly salty, and delicately tangy, they surprise with their finesse and elegance on the palate. Their shape lends itself to a variety of preparations, whether as an appetizer, in a cocktail party, in a salad, or as a garnish for various dishes.
Still relatively unknown, caper leaves represent, in my eyes, a culinary “innovation” . I present them for their rarity and their gastronomic potential, which I believe is still untapped, and above all because I love them: crunchy, slightly salty and delicately tangy, they offer an original alternative to classic condiments.
Hand-picked and prepared without additives or preservatives, they enhance the entire caper plant and thus embody naturalness, sustainability and the transmission of the terroir .
With their elegance and versatility, they pave the way for new culinary combinations, blending Mediterranean tradition and contemporary creativity.
