A couple of drops are enough for this extra virgin olive oil to bring its own character to every dish, infusing it with the festive atmosphere of southern Italy. Ideal for elevating both traditional and modern cuisine.Coratina: its name instantly recalls its origins in Corato, Apulia (Bari province). Thanks to its widespread cultivation throughout the region, this iconic variety is now among the most recognized in the world.
When tasted as a monovarietal, Coratina Maselli is a true gustatory treasure: an extra virgin olive oil with a green hue and golden highlights, offering a medium to intense herbaceous fruitiness. From the very first drop, it captivates with powerful aromas of fresh almond and artichoke heart, accompanied by a pronounced bitterness and pungency—signatures of its exceptional richness in polyphenols, those natural antioxidants so beneficial to health.
With its bold character and aromatic depth, Coratina is perfect for lovers of strong, intense, and vibrant flavors. It beautifully enhances Mediterranean dishes with a vibrant and authentic touch. A characterful oil for passionate palates.Favolosa: considered the variety of “renaissance,” Favolosa lives up to its name. This vigorous olive tree produces fruit quickly, is resistant to many pathogens—including the dreaded Xylella fastidiosa—and releases a unique, utterly unforgettable fragrance.
In its monovarietal version, Favolosa is a bright green extra virgin olive oil with golden undertones. Its medium herbaceous fruitiness reveals subtle aromas of fresh tomato. On the palate, the bitterness and pungency range from moderate to light, offering a finely balanced sensory experience.
Favolosa is the ideal oil for lovers of delicate and fragrant flavors. It enhances Mediterranean cuisine with elegance, elevating the dish’s flavor without overwhelming it. An aromatic caress for refined palates.Cima di Melfi: renowned for its lightly fruity aroma and more intense flavor, with notes of green olive and a perfect balance of bitterness and pungency. Originally from the Vulture region (halfway between Bari and Naples), this variety was planted in Apulia over 50 years ago.
Andrea cultivates it on the hills of the Renzo district in Acquaviva delle Fonti (Bari province), and although the olives reach full maturity in November, they are harvested in October (while still green) to produce an oil of exceptional quality.
In its monovarietal version, Cima di Melfi is a green extra virgin olive oil with medium herbaceous fruitiness, notes of almond and artichoke, and a moderately high level of bitterness and pungency.Don Carlo: the story of a new generation of olive trees, born from the desire to create a variety resistant to disease—especially the feared Xylella fastidiosa—while offering a remarkably intense aromatic profile.
A unique sensory profile: the oil from this variety immediately captivates with its intense fruitiness, dominated by clear aromas of ripe tomato and tomato leaf. A bold personality that evokes sun-drenched gardens and summer vegetable patches.
On the palate, the monovarietal Don Carlo oil delivers a straightforward attack, with intense pungency and light bitterness, followed by a beautiful finish. Notes of freshly cut grass and green olives round out the profile, while the tomato leaf aromas subtly intensify with the heat of the dish.
A true gastronomic chameleon: this extra virgin olive oil adapts beautifully to a wide variety of preparations. It enhances crisp salads, fragrant bruschette, grilled or marinated vegetables... whether taking center stage or playing a discreet supporting role, Don Carlo elevates every bite. An extra virgin olive oil to discover for those who love bold, vibrant oils full of vegetal freshness.
