Millennial Terroir

In the heart of the Valley of Olympia, the birthplace of Olympism, stand traditional olive groves, witnesses to an invaluable cultural and natural heritage. These百年 old trees, nourished by the waters of the Alpheios and Kladeos rivers, flourish in an ideal Mediterranean climate, offering olives of exceptional quality. Agricultural practices, passed down from generation to generation, respect the authenticity and purity of this natural treasure. Local varieties such as "Koroneiki" and "Kolireiki" or "Olympia" (Nemoutiana), recently rediscovered and saved, are carefully cultivated to produce an extra virgin olive oil with an incomparable taste.

Wouldn't Olympian olive oil be one of the best testaments to our universal heritage?

2025/2026 Vintage

Clay soil, located 180m above sea level.

Olive trees between 150 and 200 years old.

The year was extremely dry and very hot.

The olives were harvested by hand from October 10 to 17, 2025, to preserve this exceptional terroir: tree integrity, commitment to sustainable development.

Sensory Experience

On the nose, this early harvest oil presents with notes of freshly cut grass, artichoke, tomato plant, and even asparagus.

On the palate, its initial taste is fresh and round, even less vegetal, offering softer and less bitter notes, forming a very pleasant whole.

The tasting concludes with a sustained spiciness of wild arugula, which dissipates immediately when the olive oil is mixed with your dishes.

Red meats (ideal for barbecues!).

Launched for the 2023/24 vintage, Ad Olivetum (then "Sélection") inaugurates a series of limited-edition olive oils, each time presenting a different terroir and universe: olive variety, agricultural practices, climatic conditions, and mill expertise.

For my first oil creation, I chose to celebrate the Paris 2024 Olympic Games by paying tribute to the region where they originated, which is also the region where my family comes from: Olympia and its archaeological site, in the prefecture of Elis in the Peloponnese, Greece.

As an accredited taster and jury member for international olive oil competitions, Tammy has developed a unique sensory sensitivity and a deep understanding of the nuances of olive oil, as well as the entire value chain. Her unparalleled expertise greatly contributed to this project.

She also has extensive experience as a senior executive in the olive oil industry (production and distribution) worldwide.

However, Tammy's expertise extends far beyond the industry itself. Often invited to lead extra virgin olive oil tasting training sessions, she launched her personalized coaching program for consumers, buyers, and retailers, to share her passion and knowledge while contributing to the growth of a quality olive oil culture, to the delight of her followers.

How do I store my olive oil?

The three enemies of extra virgin olive oil are heat, air, and light...

  1. Choose opaque bottles (never transparent!) and avoid direct contact with light.
  2. Keep your oil in a dark, cool place and avoid exposing it to a heat source if not necessary (oven or other cooking area).
  3. Depending on your consumption rate, try not to keep too many half-used bottles for too long (the air inside accelerates oil oxidation). A few weeks is still okay.

Filtered or unfiltered?

My recommendation: always choose filtered olive oil.

Suspended particles (residues of skin, pulp, or pit) accelerate the natural oxidation of the oil and contribute to a faster degradation of its aromatic qualities and its polyphenol content.
