We prepare your order for shipping as soon as it is received.
Orders are delivered within 1-2 days in Spain and 2-3 days in Europe (excluding UK and Switzerland).
We work with FedEx for Europe; once shipped, you will receive a tracking number in case you wish to change the delivery date or location.
For now, our e-shop only serves the European Union (excluding the United Kingdom and Switzerland). Sign up for our newsletter and we will inform you as soon as other countries/regions are added.

We take great care in packaging your order so that it is delivered in perfect condition. Each bottle of olive oil, each product is carefully wrapped in protective material to prevent any damage during transit.
For large orders and HoReCa formats, we use reinforced cardboard boxes and specially designed inserts to secure the bottles.
Furthermore, we use eco-friendly packaging (recycled and/or recyclable), reflecting our commitment to sustainability. You can therefore be assured that your product will not only arrive intact, but also in environmentally friendly packaging.
We do our best to protect the products included in your order.
Nevertheless, should an order be delivered to you with broken products, please inform us immediately (if possible on the same day of receipt) and we will do what is necessary to replace it as soon as possible at no additional cost.
If the damage is visible before delivery, please do not accept it so that our logistics partner can take this into account.
Returns and Refunds
We want every order to be a successful experience. But in case it's not or if you change your mind, we'll take care of it.
Right of Withdrawal
In accordance with European regulations, you have a 14-day period from the receipt of your order to exercise your right of withdrawal.
To be eligible for a refund, products must be returned:
- unopened;
- unused;
- in their original packaging;
- in perfect resalable condition.
Return shipping costs are the responsibility of the customer.
Opened Food Products
For hygiene and food safety reasons, opened, partially used, or unsealed food products cannot be returned or refunded.
Damaged Product or Order Error
If your order arrives damaged or if there is an error in your delivery, please contact us within 48 hours of receiving your package.
To process your request quickly, please include:
- a photo of the product concerned;
- a photo of the package received;
- your order number.
Depending on the situation, we will proceed with a product replacement, a credit note, or a refund.
Refund
Once the returned products have been received and inspected, the refund will be processed via the payment method used during the order, within a maximum of 14 days.

I guarantee fair prices for the producers I work with and I strive to maintain a balance in the value chain (from the tree to your table) to offer impeccable quality at a fair price for you too, taking into account transportation and storage costs to ensure the quality of the products offered at all times.
Yes, all local taxes are included. International customs duties, where applicable, are the responsibility of the customer, but this will be visible and you will be informed before finalising your order.
Our shipping costs vary depending on the country and the weight of your order, as well as the global geopolitical situation (fuel prices, etc.).
To simplify, we offer free shipping for France and the EU for any order over €55.
We offer deals for the purchase of "packs" (e.g., olive caviar trio) or our family-size packs (2 or 4 BIBs).

In my opinion, a premium extra virgin olive oil is an oil for which, throughout its value chain (from tree to table), decisions have been made to preserve quality, sometimes even at the expense of quantity. For example: cultivation methods, harvest time, transport methods, choice of mill, storage, etc.
To identify it, choose oils that display more "facts" (e.g.: variety, harvest date, bottling date, place of production, etc.) than marketing phrases (e.g.: exceptional oil, small quantity, premium oil).
Whether for my signature oils or selected oils, the olive groves from which the oils I offer are produced are located in various regions around the Mediterranean.
Currently, I work in Greece, Italy, and Spain, and support a small-scale, very high-quality production model with complete traceability.
We use modern, state-of-the-art mills that prioritize hygiene and precision, as the technicality of the mill, as well as its cleanliness, play a crucial role in obtaining excellent quality extra virgin olive oil. Ad Olivetum follows the "first cold extraction" method, with the olives having been brought to the mill only a few hours after harvesting to maximize their flavors and aromas.
The oils are then filtered directly to preserve all their sensory richness and minimize the chances of defects appearing, after which they are immediately stored in tanks with nitrogen.
Ultimately, these specifications guarantee a fresh and pure oil that reflects the dedication of the producers with whom we work.
Store the oil in a cool, dark place, away from light, heat, and air, in a sealed bottle.
Therefore, avoid transparent bottles by the window or next to the stove.
Prefer smaller containers (50cl) or, even better, a bag-in-box (BIB), to minimize the impact of air, which is olive oil's greatest enemy along with heat and light.
In general (although loads of ifs and buts come into play), EVOO has a shelf life of 12 to 18 months from the date of bottling (usually not long after harvest for good quality oils).
Once the bottle is opened, try to consume it within 2 months, so that it is still fresh to fully enjoy its sensory experience.
Olive oil does not expire like fresh food, but it can lose its aromas and flavors over time, which is why it carries a best-before date.
Although legislation does not stipulate how many months it should be consumed within, "premium" olive oils generally display between 12 and 18 months at most, in order to guarantee the freshness and sensory profile of the oil as well as its legal classification as extra virgin olive oil.
In large distribution (supermarkets, etc.) this can go up to 30 months.
Ad Olivetum comes from Latin and means "towards the olive grove". It is above all an invitation. An invitation to discover the producers, their ancient olive trees, their dynamic communities and their way of life.

Ad Olivetum has existed conceptually since 2021. It was launched on the market in December 2022, after the project was presented at the independent winery Le Celliers des Boulevards in Strasbourg, France.

My adventure in the world of olive groves began with an exciting opportunity: working as an external consultant for an American startup.
The project focused on combating the devastating impact of Xylella Fastidiosa, a deadly bacterium responsible for the destruction of millions of olive trees in Italy, France, and Spain (also known as Pierce's disease in grapevines).
Subsequently, I offered my services as a consultant across the extra virgin olive oil value chain, collaborating with producers and cooperatives in Spain, Greece, and Italy. However, I quickly realized that my true passion lay in hands-on work, in the field, rather than in creating beautiful PowerPoint presentations or complex Excel files for my clients.
This is how Ad Olivetum was born: an initiative aimed at representing producers whose work and commitment to exceptional quality inspire me. It is also my way of ensuring fair and sustainable income for these producers to support their families and communities.
