Dimitri Anastopoulos
A lawyer by training and a born merchant, I launched AD OLIVETUM in 2021 to represent certain producers with whom I was then working on the plant health of their farms in Greece, Spain, and Italy.
Since then, the project has grown into a broader activity centered around Mediterranean olive groves: consulting from production to marketing, creating a range of products to accompany wine, cheese, and cured meats, as well as partnerships with haute gastronomy and training in culinary professions.
And lots and lots of extra virgin olive oil tasting!
Knowledge acquired & shared
Graduated in olive oil tasting from "La Fondación para la Promoción y el Desarrollo del Olivar y del Aceite de Oliva" of Jaén, the "Escuela Superior del Aceite de Oliva" of Valencia, and in end-to-end integrated management of the extra virgin olive oil value chain from the "Universidad Internacional de Andalucía."
I gladly dedicate a large part of my time to presenting, explaining, and promoting extra virgin olive oil.
Collective Knowledge
Passionate about the cultural dimension of olive groves, I surround myself with sensory experts, agronomists, master millers, and culinary professionals who share my vision and approach.
We work together from production in the olive grove, with and for the producers I represent.
This extends all the way to the kitchen with chefs and at points of sale during the tastings and events I organize.
At the source
A Greek national and Catalan resident (Barcelona, Spain) since 2015, I am at the heart of global olive oil production, as well as scientific research and sensory analysis.
This "blend" offers me unique proximity to producers.
My continuous training, as well as my presence in the olive groves throughout the year until harvest day and extraction at the mill, allows me to genuinely guarantee the quality of the products I offer.
Supporting the olive oil industry
I also act from a perspective of sharing, cooperation, and exchange within the olive oil sector by personally organizing various conferences and international missions.

A unique exchange organized in Kalamata with the collaboration of the "Enosi Messinias" cooperative in February 2023.

Main theme: to understand how Spain became the world leader in extra virgin olive oil in terms of both quantity and quality, and, above all, how the local industry can draw inspiration from this.
Expoliva
Since 2023, I have been organizing a professional trip to Jaén (Andalusia) for the Expoliva trade show.
Beyond visiting the world's largest olive oil event, the main objective was educational: to discover different production approaches on site, exchange ideas with olive growers, mills, and local stakeholders, and better understand the realities of the sector.
Thanks to the generous hospitality of our Andalusian hosts, these encounters fostered a true sharing of experiences, in a spirit of mutual learning and collaboration between olive oil professionals.
Paxos vs Xylella Fastidiosa
At the invitation of the Mayor of the island of Paxos (Greece), Mr. Spyros Vlachopoulos, I had the opportunity to organize a meeting dedicated to the future of local olive growing.
Discussions focused on two closely related topics: the potential threat of the Xylella fastidiosa bacterium and the prospects for developing high-value-added extra virgin olive oil production.
This meeting brought together producers, mills, agronomists, institutional representatives, and tourism professionals in a spirit of dialogue and cooperation.
A common conviction emerged: the sustainable preservation of Paxos' olive heritage requires both risk anticipation and the economic valorization of its olive oil.
