that is, through its "terroirs",
its sensory experience, and also its food pairings.
That's why, incidentally, I started offering it to wine merchants
because who better than a wine merchant to talk about terroir?

As with wine, olive oil terroirs refer to an area where collective knowledge, interactions between an identifiable physical and biological environment (soil, climate, biodiversity, grape varieties), and specific olive growing practices (harvesting methods, mill technology, and storage practices included!) develop.

Just as a Pinot Noir from Burgundy, the Loire, or Alsace will give us three very different wines, the same olive "varietal" grown in different regions will yield two oils with very distinct sensory profiles.
The same applies to the same variety in the same region but cultivated differently (irrigation, harvest time, etc.).
This is how we come to speak of an olive oil terroir, far beyond the olive variety or the "harvest"
