Origin

Groves located around the village of Vallbona de les Monges in the Province of Lleida (90 minutes from Barcelona), at an altitude of between 500 and 600 meters.

Almost 2 hours drive from Barcelona, the climate there is less Mediterranean and significantly more continental.

Terroir

Olive trees grown on side terraces, delimited by century-old dry stone walls, according to organic farming principles under (very) dry cultivation conditions.

CLIMATE: Continental Mediterranean climate, with cold, dry winters and hot summers, tempered at the end of the day by the "marinade", a sea breeze that cools the nights. Rainfall, which is rare, is concentrated in autumn and spring (350 to 450 mm per year). This climate, on the border between Mediterranean and continental, is particularly conducive to a high concentration of antioxidants.

Producer

Olive trees are planted on terraces that shape the dry landscape of Vallbona de les Monges (a village in the Catalan Province of Lleida, 90 minutes from Barcelona), bearing witness to a vibrant agricultural past. Finques oil is born from these Arbequina olive groves, the fruit of an almost resilient, patient, and demanding olive cultivation.

Traditional non-irrigated olive cultivation and organic certified. The harvest is done by hand, and the olives are transported to the mill the same day in small crates weighing 11 to 13 kg to preserve their integrity and freshness until they arrive at the mill.

The olives are crushed using a Tuscan-technology hammer mill, followed by gentle malaxation (less than 45 minutes) at a low temperature (22–25 °C), using a cold extraction process.

Oil separation is done by two-phase centrifugation, followed by filtration.

Bottling is done in small batches, according to demand, to preserve the oil's freshness by storing it in tanks under optimal conditions.

Sensory Experience

Intense and aromatic, combining bitter and slightly pungent notes, this oil is the pure expression of this dry landscape at moderate altitude.

An organic extra virgin olive oil that fully embodies the varietal character of Arbequina, a traditional and indigenous variety from this region near the town of Arbeca, from which it takes its name.

Green and fruity on the nose, smooth and pleasant on the palate (almost no bitterness at all), finishing with a very slight pungency when tasted neat, but not perceptible once mixed with your dishes.

Food pairings

Delicate and subtle, this oil perfectly complements white fish, steamed vegetables or poultry. And, of course, it's great for dressing your salads.

How should I store my olive oil?

The three enemies of extra virgin olive oil are heat, air, and light...

  1. Choose opaque bottles (never transparent!) and avoid direct contact with light.
  2. Keep your oil in a dark, cool place and avoid exposing it to a heat source if not necessary (oven or other cooking area).
  3. Depending on your consumption rate, try not to keep too many half-used bottles for too long (the air inside accelerates oil oxidation). A few weeks is still okay.

Filtered or unfiltered, which one to choose?

Always choose filtered olive oil.

Suspended particles (skin, pulp, or pit residues) accelerate the natural oxidation of the oil and contribute to a faster degradation of its aromatic qualities and its polyphenol content.

All the olive oils I offer are filtered.
