A component of Paxos' identity

Olive oil tastings in Paxos are the first step in a more ambitious vision. Beyond sharing olive oil culture with visitors, this project aims to contribute to the regeneration of the island's olive heritage.

For millennia, olive trees have shaped the landscapes, traditions, and gastronomy of the Mediterranean. In Paxos, olive trees are much more than an agricultural crop. Even though their economic role is now limited, they remain deeply rooted in the island's identity.

Through this experience, I want to create a link between this living heritage and contemporary gastronomy, using a simple, friendly, and accessible approach to extra virgin olive oil. Ultimately, the goal is to participate in the restoration of abandoned olive groves, to promote regenerative agriculture, and to encourage younger generations to rediscover the richness of their territory.

Each tasting helps to advance this vision.
