  • The activity is designed for groups from 1 to 6 people. For larger groups an additional 20€/person will be charged (payable on site).

Where olive trees shape the entire local culture

Step into a centuries-old olive grove and discover the agricultural heritage that has shaped Paxos for generations.
Surrounded by olive trees, stone walls and the sounds of nature, you will learn how olive oil is produced, how to taste it and why it remains at the heart of Mediterranean culture.
More than just a tasting, it is an immersion into the landscape and traditions of the island.

Olive oil Terroirs

Most of us know olive oil as an ingredient. At best, a flavoured condiment.
However, like wine, extra virgin olive oil is the expression of its very own "terroir": variety, soil, climate, cultivation mode, harvest time and even extraction process at the olive mill to name a few.
Throughout the activity, you will learn how to recognise aromas and understand quality. I'll then help you identify the characteristics of each sensory profile, which ultimately is what makes each extra virgin olive oil so unique.
For this reason we'll taste extra virgin olive oils from Greece, Italy & Spain, very different from one another.

Part of Paxos Identity

Olive cultivation has shaped the landscapes, traditions and cuisine of the Mediterranean for thousands of years.
On Paxos, olive trees are more than agriculture. However, they have no real agricultural interest nowadays. But they do indeed remain a part of the island's identity.
With this experience I aspire to connect local heritage with contemporary gastronomy through a simple and enjoyable introduction to extra virgin olive oil.

Paxos Olive Oil Tasting is the first step of a broader vision.
Beyond sharing the culture of extra virgin olive oil with visitors, the project aims to contribute to the long-term "regeneration" of the island's cultural heritage.
In the years ahead, the ambition is to help restore abandoned olive groves and support regenerative farming practices under a collective project younger generations will want to be a part of.
Every tasting helps support this journey.

With AD OLIVETUM, I approach olive oil much like wine: through its origin, variety, sensory character, and culinary pairings.
Alongside my own olive oil creations, I offer extra virgin olive oils from carefully selected producers across the Mediterranean, chosen for the quality of their craftsmanship and the authenticity of their work.
