Short video introducing Ad Olivetum

Ad Olivetum in Latin means “towards the olive grove.”

The heart of Ad Olivetum is the extra virgin olive oil, which I conceive like wine.

I offer extra virgin olive oils from Spain, Italy, and Greece, selected or created by my collaborator, the sensory expert Tammy Karambelas, for the excellence of their sensory experience that is, the fruitiness, bitterness, and pungency, and the food pairings that go with them.

Beyond extra virgin olive oil, I’m developing a range of products to be paired with wine, cheese platters and small cuts, like Olives, spreads and a selection o Mediterranean nuts. With me today at the fair is the cook David Luangkhot, who not only presents the products but also highlights the food pairings and different presentation ideas.

Fry an egg with a Picual or with a Koroneiki, it’s a whole different thing!

Ad Olivetum is really an invitation to discover the producers, their olive groves, and the Mediterranean legacy of olive oil.
