Producing olive oil is a demanding job. Depending on the case (variety, harvest time, irrigation and climate), it may take up to 15 kg of olives to obtain a single litre of oil. This explains the higher price for early harvests (harvested from October, discover it here) compared to other oils (harvested in November, discover it here), but also its richness in taste and its health benefits (anti-oxidants and its polyphenols).
