Single-estate and single estate extra virgin olive oil

The olive trees are planted on terraced plots that shape the dry landscape of Vallbona de les Monges (a village in the Catalan province of Lleida, 90 minutes from Barcelona), bearing witness to an agricultural past that is still very much alive. 

Oli de Finques Organic is born on these parcels of Arbequina olive trees, the result of an olive-growing practice that is almost resilient in nature—patient, demanding, and deeply rooted.

Traditional, non-irrigated olive farming, certified organic. The harvest is carried out by hand, and the olives are transported to the mill the same day in small crates of 11 to 13 kg to preserve their integrity and freshness until arrival.

The olives are crushed using a Tuscan-technology hammer mill, followed by gentle malaxation (less than 45 minutes) at low temperature (22–25 °C), according to a cold-extraction process.
The oil is separated by two-phase centrifugation, followed by filtration.
Bottling is carried out in small batches, according to demand, in order to preserve the freshness of the oil, which is stored in tanks under optimal conditions.

    Green fruitiness on the nose, with a soft and pleasant entry on the palate (almost no bitterness), finishing with a very light peppery sensation when tasted on its own, barely perceptible once incorporated into dishes.
