The production of olive oil is an art that requires time, know-how and a lot of attention. An olive tree takes several years before giving its first fruits, only 2 to 5% of the flowers will give olives and each harvest is unique. The olives are picked carefully so as not to damage them (because this would accelerate their fermentation and thus reduce the quality of the oil produced), brought to the mill the same day within a few hours, then cold extracted (and not pressed!), to preserve all their nutritional and taste qualities.


This slow and meticulous process will give an extra virgin olive oil, a reflection of the terroir and the work of the producers.
