THE OLIVE GROVE
EX UA Ex Ulivis Albis, that is, from green olives, the name given by the Romans to the oil extracted from the best quality olives.
Bellissima is an extra virgin olive oil made from the Peranzana variety (native to the region) and the Bella di Cerignola variety.
Bella di Cerignola is a variety traditionally used to produce table olives. On the other hand, it is a so-called "late" variety, that is, with slower maturation, and therefore harvested (depending on the climate) from the second half of October.
THE SENSORY EXPERIENCE
Visual phase: very dense, emerald green in color
Olfactory phase: medium-low fruitiness, notes of green almonds and fresh grass
Taste phase: medium bitter, slightly spicy, very well balanced and a herbal aftertaste
