THE OLIVE GROVE
In the heart of the Valley of Olympia, the cradle of Olympism, stand traditional olive groves, witnesses of an inestimable cultural and natural heritage. These centuries-old trees, nourished by the waters of the Alpheios and Kladeos rivers, flourish in an ideal Mediterranean climate, offering olives of exceptional quality. The agricultural practices, passed down from generation to generation, respect the authenticity and purity of this natural treasure. Local varieties such as "Koroneiki" and "Kolireiki" or "Olympia" (Nemoutiana), recently rediscovered and saved, are carefully cultivated to produce an extra virgin olive oil with an incomparable taste. Each olive is hand-picked in order to preserve the integrity of the tree, and embody the commitment to excellence and sustainable development.
Could it be that olive oil from Olympia is one of the best examples of our universal heritage?
THE SE N SORIAL EXPERIENCE
On the nose, this early harvest oil presents itself with notes of green tomato, early green apple and green plum. On the palate, its entry is fresh and very sweet, followed by a subtle bitterness, very quickly transformed into a spiciness of pink pepper (pleasant burn) on a final touch of endive.
FOOD PAIRING
Food and oil pairings: pasta salad, fresh fromage blanc, ice cream and fruit salad (apple, pear and grapes).

Ad Olivetum Sélection 2023/2024 inaugurates a series of limited edition olive oils, each time presenting you with a different terroir, a different universe: olive variety, agricultural practices, climatic conditions and technicality of the mill.
For this first 2023/2024 Selection (harvested in October 2023) we have chosen to celebrate the Paris 2024 Olympic Games by paying tribute to the region where they were born: Olympia and its archaeological site, in the prefecture of Elijah in the Peloponnese, Greece.

Master miller
Established since 1989, it is under Kostas’ leadership that the family-run mill has become synonymous with the highest quality and innovation on a national scale. His work embodies his passion and commitment to scientific innovation and the region’s biodiversity. Based around the historic site of Olympia, Kostas is a pioneer in discovering, preserving and promoting the region’s endangered or little-known olive varieties.
Kostas works closely with local farmers. He invests in their training to improve the quality of production from healthy olives, and thus contributes to the prosperity of the local agricultural economy. The ultimate goal: to preserve the chemical and organoleptic characteristics of extra virgin olive oil! Because if the farmer is the producer of the olive, the real producer of the oil is the miller.
This is why we chose to work with Kostas on our first Ad Olivetum Sélection oil, in honor of the Paris 2024 Olympic Games. He also perfectly embodies the spirit that we ourselves cultivate at Ad Olivetum, that is to say the fusion between tradition, innovation and the relentless quest for excellence in order to guarantee in each bottle an exceptional sensory experience, and an invitation to visit the olive groves and their producers. An accredited taster and jury member of international olive oil competitions, Tammy has developed a unique sensory sensitivity and a deep understanding of the nuances of olive oil but also of the entire value chain. An unparalleled expertise that greatly contributed to this project.
She also has extensive experience as a senior executive in the olive oil industry (production and distribution) worldwide.
But Tammy's expertise extends far beyond the industry and the sector itself. Asked to provide extra virgin olive oil tasting training, she launched her personalized coaching program for consumers , buyers or traders , in order to share her passion and know-how while contributing to the growth of the culture of quality olive oil, to the delight of her disciples.
Training sessions are offered in English, Greek and Spanish.
